Instant Pot Cabbage Beef Soup
A simple, nourishing soup with tender beef and cabbage that cooks almost effortlessly in the Instant Pot—great for those watching carbs or just craving a cozy bowl.
Ingredients
2 tbspavocado oil
1 smallonion, diced
4 clovesgarlic, minced
1 lbground beef
1 tspsea salt
1 tspground black pepper
1 tspdried oregano
3 carrots, chopped
3 stalkscelery, chopped
5 cupschopped green cabbage (about 1/2 medium cabbage)
4 cupsbone broth or beef broth
28 ozcan diced tomatoes

Switch your Instant Pot to Sauté mode and drizzle in some avocado oil. Once the oil shimmers, toss in the onion and garlic and stir for about 5 minutes until they smell amazing and turn translucent.

Add the ground beef, sea salt, black pepper, and dried oregano to the pot. Cook another 5 minutes, stirring, until the beef is just starting to brown.

Mix in the chopped carrots and celery and cook for 5 minutes, stirring now and then, until they soften a bit. Then stir in the chopped green cabbage, broth, and diced tomatoes until everything’s well combined.

Turn off the Instant Pot, lock the lid in place, and make sure the pressure valve is set to Sealing. Cook on high pressure for 15 minutes. After it beeps, let the pressure drop on its own for 15–20 minutes until the lid unlocks easily.

Give it a taste and add more salt if needed. Ladle it into bowls while it’s still hot and enjoy!
