One Pot Shawarma Rice
This a super easy one pot dish inspired by one of my favorite foods on Earth. I marinate my chicken thighs in shawarma seasoning with a touch of smoked paprika and lemon juice. You can let this sit but I went straight to searing because I was short on patience. We only want cook the chicken 70 percent of the way since it’ll finish with the rice. It leaves behind that beautiful fond for the onions and garlic to cook in. Some turmeric for that golden color and our rice joins the party, thirsty and ready to drink all that flavor up. Then you just cook it as you would with any other rice. By now you’d probably noticed I always like some condiments to go with my meals. A cool crisp and light vinegar based slaw will bring the much needed brightness and texture to a dish like this. Next a tahini that requires less than 5 minutes for that creamy and luxurious mouthfeel. When I’m starving out of my mind after the gym or a long day, this is the kind of meal I want.
