Instant Pot Black Eyed Peas

1 pounddried black-eyed peas
2 tablespoonsolive oil
1 largeyellow onion, diced
1 mediumgreen bell pepper, diced
4 garliccloves, minced
1 jalapeño pepper, finely diced
2 tablespoonstomato paste
1 teaspoonkosher salt
0.5 teaspooncayenne pepper
0.5 teaspoonsmoked paprika
1 can(14 ounces) crushed tomatoes
4 cupsvegetable broth
1 teaspoonliquid smoke
2 bayleaves

Rinse the peas until the water runs clear, then cover them with fresh water and let them soak overnight.

Drain and rinse the peas. Turn on the Instant Pot’s sauté setting and warm the olive oil. Add the onions and bell peppers and cook 8–10 minutes until they soften.

Stir in the garlic and jalapeños, cooking another 2–3 minutes. Add the tomato paste, cayenne, smoked paprika, and salt; sauté 1–2 minutes more.

Pour in the vegetable broth and liquid smoke to deglaze. Squeeze the canned tomatoes by hand over the pot, then add them along with the bay leaves, thyme, and the soaked beans. Stir everything together.

Bring the mix to a boil on sauté mode. Lock the lid in place and cook on high pressure for 15 minutes, then let the pressure release naturally for 10 minutes.

Skim off any foam that rises to the top with a slotted spoon. Ladle into bowls and enjoy.
