Turn your oven up to 200 °C so it’s nice and hot when you’re ready to bake.

In a pan over medium-high heat, fry the bacon until it’s golden and crispy—about 10 minutes. Lift it out with a slotted spoon and let it drain on paper towels, but leave a little of that smoky bacon oil in the pan.
