Slice sweet onions into ½-inch rings and gently pull them apart into individual layers. Pick out the biggest rings and stack them if they wobble so they stay steady.

In a bowl, mix together softened cream cheese, shredded cheddar, chopped jalapeños, garlic powder, onion powder, paprika, salt, and black pepper until smooth and well combined.

Slide one onion ring inside another to make a sturdy double layer. Pack the cheese mixture into the space between the rings, pressing lightly to fill it in. Arrange the stuffed rings in a single layer and freeze for 30–45 minutes until they hold their shape.

Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs. Roll each frozen stuffed onion ring in flour, then dip it in egg, and coat it completely in breadcrumbs. For extra crunch, dip it back in egg and breadcrumbs one more time.

Choose how you want to cook them: Air fry at 375°F for 10–12 minutes until golden and crispy; bake at 400°F on a sheet for 18–20 minutes, flipping halfway; or deep fry in 350°F oil for 2–3 minutes until golden, then drain on paper towels.
