This is my quick dough I use in my Ninja outdoor oven. It’s a good 5hr start to finish this 75% hydration soft springy sandwich bread, which toasts very well and crust wont be as tough as sourdough bread. Gentle handling is the key. This is not an exact science and I change things to adjust the loaf, longer shorter bake time, cooler or warmer bake temperature.
