One of my all time favorite tacos is beef tongue, or lengua. I know that eating a tongue doesn't sound all appetizing, but trust me here. It's simmered with spices to become melt-in-your-mouth tender. Pair it with a salsa–or better yet a BONE MARROW salsa–and it's game over.
