Shrimp Bao with Pickled Mango and Red Onion
Baos go great with any filling basically, their texture make them perfect for just about any protein. Shrimp is not an exception, these were pretty good, with lots of flavor. One thing that makes sandwiches in general a lot better are pickles. They add a nice acidity to the sandwich and they balance everything. For this one I used pickled mango, and pickled red onion. The toppings in this bao were the shrimp, pickled mango, pickled red onions, crushed peanuts, cilantro, scallions, and mayo mixed with the char siu marinade.
