Kick off the Lunar New Year with one of my favorite Thai noodle dishes..... I LOVE ME A WIDE RICE NOODLE DISH ANYDAY, and you can never go wrong when it comes to something fast, easy and budget friendly. You can find wide rice noodles in most Asian grocers, just make sure to let them come to room temperature before you cook to package instructions, otherwise they will stick together! We are implementing a bunch of techniques you should be familiar with on this channel: 1) velveting 2) mise en place 3) preparing your noodle correctly 4) not overcrowding your wok or pan, so you saute and not steam! 5) slicing your protein across the grain, and on a slight bias (for more surface area) + slightly freezing your protein prior to slicing to make it easier! It's very similar to a Chinese beef chow fun, but with a few ingredient changes. It comes comes together quickly, is great for a potluck, and you wont have to worry about cleaning up cause there wont be any leftovers.
