This bowl is absolute perfection when you are in the mood for something other than cheese! Try swapping out the tofu for chicken if you like and the smoked salmon for a delicious roasted or air fried filet instead. I am obsessed with furikake lately so used it here in two places - on the rice and in the cucumbers. You will LOVE the cukes - I simply dress them with a bit of agrodolce vinegar for a sweet and fresh salad on top of this bowl.
