Turn your leftover rice into this GORGEOUS crispy kimchi and gruyere rice fritter. I originally saw this in Yotam Ottolenghi's Flavor cookbook, but I wanted to do this in my own way–here instead of individual smaller fritters, I did one large fritter, kind of like a hash brown.
