I see so many brands out there on the market that you almost need a microscope just to read the labels. Quite comically, I need my reading glasses to see just what is being put into these mixtures - the font is so wicked tiny! The reality of what you find on the shelves of grocery stores is that they are developed for "shelf stability". That means preservatives, stabilizers, and often other flavor-enhancing chemicals are added. Even anti-caking agents used are not just silicon dioxide now. Sometimes there are going to be more than just one. I want to be able to control what is going into the food I create. So, I enjoy making my own spice blends and mixtures at home, including some homemade taco seasoning! This is not the same as those pre-made/shelf stable products. This allows for much better control over the amount of salt that goes into this mixture. I created a baseline to work with that is not only easy to make but has no preservatives, stabilizers, and no flavor-enhancing chemicals. This is the perfect small-batch recipe. You can easily halve the recipe as well. Because ultimately you, the reader, are in control of how much kosher salt and black pepper you prefer, I leave it to you to make your adjustments. Some folks might like more kosher salt. Others might want more black pepper. Start with this and make your own adjustments to your own palate. And, enjoy the clean flavors!
