I have this little tradition where on Halloween, I try to only eat pumpkin dishes, and this was one of them!!! They came out so good. Soft on the inside, crispy on the outside, and filled with melty cheese (or even meat if you want to switch it up). They feel a little nostalgic, a little cozy, and honestly just like such a fun appetizer to make and share. It’s savory pumpkin done right — simple, comforting, and perfect for fall.
