I got together with my French friend Wolfgang to cook–we wanted to combine our cultures together to create the ultimate fusion dish. Sabzi polo bah mahi is a legendary Persian dish known all over. The herby rice perfectly supports the fish, they're a match made in heaven. In French Cuisine, beurre blanc is often served with fish. The result: Sabzi polo bah mahi with a saffron infused beurre blanc. It was DELICIOUS! Oh, and we cooked the whole fish inside a salt crust.

Ingredients
