Tortang Sardinas
Tortang Sardinas is a Filipino Sardines omelette made with canned Sardines, eggs, minced onion, garlic, spring onions, carrot and seasoned with pepper and salt. Whenever we are tight on budget, canned sardines are our go-to side dish (partner with rice). While canned sardines can be eaten as is or sautéed, it can be a little boring sometimes. Tweak it a little and turn it into something new by adding eggs and some veggies. Filipinos often eat Tortang Sardinas for breakfast. It is an omelette cooked with tinned sardines, eggs, chopped onion, garlic, spring onions, and carrot. Canned sardines are our fallback when money is tight since they taste great and are inexpensive (partner with rice). Canned sardines are versatile—you can eat them cold or sauté them, but they might become monotonous after a while. To make it your own, just throw in some eggs and some vegetables for a twist.
