So there’s this Honduran dude in my hometown named Dennis. Dennis is a LEGEND who owns 3 lucrative businesses in my town–he’s living the American dream. One of these businesses is a glatt kosher meat market that also does catering, and it’s Dennis himself that runs the show for these catered events. He might be from Honduras but that’s not stopping him from making kabob like a Baba straight from Iran. It’s a sight to see, a sweaty one man army in front of a bunch of grills flipping like 50 skewers a time. One of the specialties he serves at these events is his koobideh (Persian ground beef kabob) wraps and they are to die for. It’s koobideh, hummus, harissa paste, and tons of cilantro. Simple but more than gets the job done. If you’re going to a party and Dennis is catering, that’s what you are really looking forward to–not the actual party. If Dennis is there you know you’re about to have a hell of a night. These kofta wraps are inspired by the legendary koobideh wraps served by the legend who goes by the name Dennis. I did kofta instead, super similar but different spice blend. Instead of hummus, I went with a garlic-lemon-dill mayo, aka “white sauce”. I also added sumac onions (Dennis if you’re reading this, add these to your wraps for sure). I also would’ve added cilantro to these wraps but unfortunately I ran out–I’ll throw them into the recipe anyways. Listen, I’m a huge fan of Dennis, but I would say if the kofta in these wraps were charcoal grilled, mine would win. But who cares, both are delicious.

0.5 of a medium sized onion, thinly sliced
