This tuna rice is inspired by Cabo Verde arroz de atum with some Haitian flavors. It only takes 30 minutes to put together which makes it perfect for a weeknight dinner. You will be making it more than once. When it comes to cooking rice in Haitian cuisine, the ratio is slightly different, for perfect grainy rice with a crispy bottom. We use 1:1 ratio, but feel feel to a bit more water if you prefer your rice on the fluffy side. The kind of rice you use matters! I personally like to cook with basmati rice, it is a bit healthier and tastier to me. You're welcome to use white jasmine rice for this recipe. For the tuna, i used Cape Verdean tune, Portugues tuna is a great choice as well. They're my favorite tunas, you can purchase them from Amazon, check out my storefront.

1 can of Cape Verdean tuna In vegetable oil
2.5 cup du Riz shella (parboiled basmati rice)
3 Bay leaves
