Schnitzel is German for "thin" and it is less a specific dish and more of a preparation with hundreds of variations. In this case, Allgäuer Schnitzel, or Allgäu Schnitzel, comes from the mountainous Allgäu region along the Bavarian/Tyrol border. Breaded and served with melted Alpkäse (alpine cheese) which is from this region, some butter and a sautéed tomato or mushrooms. Very hearty and tasty. Assumes 2 cutlets per person

Ingredients

4 cutlets (pork, chicken, veal)
0.25 cup vegetable oil
0.5 stick of butter
