Short ribs with new potatoes, yes this is low carbed for diabetics if portion control is kept. Start out with 1/4 of potatoe or sweet potato, check your glucose readings pre and post meals. If it spikes then you will have skip on the potato and go with carrots or another root vegetable. If your blood sugar is within limits you can try adding another 14c next time checking again both pre and post meal. It does not spike me and my spouse but people are different. You do need some carbs but if this isn't it for you, please find another carb for your meal so your personal carb daily allowance is met.

2 tbsp of bacon grease
1 cup chopped leeks
