Inspired by one of my favorite chefs, Yotam Ottolenghi this spicy mushroom lasagne will be your new favorite pasta dish. I actually find that I prefer mushroom as a substitute over meat in a lasagne, as it’s much lighter but you still get that meaty texture and deep umami flavor. This recipe also calls for burrata instead of béchamel, as you’re getting that thick, creamy texture you want but without the work of actually making a béchamel.

1.5 lb oyster mushrooms
