Janchi means party, and Guksoo means noodle in Korean. Put those together we have Party Noodle! The name originates from the dish traditionally being served at parties like weddings and other celebrations from back in the days because for one, it is something easy to serve a big crowd and two the long noodles represent hope for prolonged happiness of the occasion. This is a relatively simple dish, stock is often made with dried anchovies (but here I made with only Kombu and dried shitake mushrooms) and then in the stock goes the cooked thin noodle Somyeon topped with veggies, egg and the highlight- Yangneum Ganjang sauce! This sauce is almost exactly the same as the sauce used to make Mayak egg, so you know what to do if you have any leftovers ;) Just boil some eggs to your desired doneness, peel and dunk them in the sauce overnight!
