The snowy winter season is among us, and the colder weather calls for all things cozy including this hearty and delicious Korean chicken soup! Another variation of this soup is made with beef but in this recipe, I used chicken breast for its lean protein and to achieve more clear and clean tasting soup. Well sweat out onion and leek gives this soup a nice depth with their subtle sweetness and the seasoned chicken, bean sprouts and mushroom adds extra flavours and textures to balance out this soup just right. This soup is relatively easy to make too, so let's get started!
