These cookies are the same recipe used in the Cookies and Cream plated dessert. I've included them here as a side recipe. They have a soft, cake-like texture that melts in the mouth and are a bit different from your usual cookie. I find them really interesting and enjoyable. They're especially good served warm or cold with a cold glass of milk. It's also best to bake them in moulds to help hold their shape.

140 g plain flour
55 g brown sugar
18 g glucose syrup
