A non-traditional take on mapo tofu using chickpeas, without Sichuan peppercorns. Costs $11.40 to make, and lasted 1 week of lunch and dinner for my partner and I, when paired with Peanut Butter Cabbage and Tofu and Broccoli. Amazing for meal prep - this freezes well!
Ingredients
2 small onions, diced
6 cloves garlic, minced
6 tbsp shaoxing cooking wine (or 3 tbsp vinegar and 3 tbsp water)
