Guilt Free Sourdough Blueberry and Oat Core Muffins
This recipe was born from the need to make use of Sourdough Discard. Anyone that has an active starter knows the feeling all too well. Though, this might be my favorite use for the discard to date! They're refined sugar free and pack on a ton of nutrients. The muffins have crisp edges thanks to polenta and butter, the inside is tender from the tart blueberries, and the oat topping that sort of turns into an oat coreeee. It's sweet without being sickeningly, it's tender without being mushy, it's everything I want in a muffin. Since they're refined sugar free and pack on tons of nutrients from the blueberries and oats, these are the perfect guilt free breakfast muffin.
