Big, bold flavors with minimal effort. That’s what this charred broccolini with a Thai-inspired chimichurri is. Chimichurri is one of my favorite condiments, and I also love the flavor profile of Thai cuisine, so I decided to combine the two. Basil, cilantro, and mint are often found in Thai cooking, and I used these herbs as the base of the chimichurri instead of parsley and oregano. Thai chiles for the heat and fish sauce for a bit of funk and umami. I like this version of chimichurri so much more than the traditional one and I won’t be going back for the foreseeable future. Make this as a side dish with your meal and watch the focus shift away from what was supposed to be the star of the show.
