This was one of those dishes Nanu didn’t make very often, but every time she did, I absolutely loved it. The colours alone made me happy — soft greens and yellows, splashes of bright red, and playful specks of black. And the crunch of the snow peas was always the best part. The flavour is so unique too: fresh, light, and yet surprisingly flavourful, thanks to the minimal but carefully chosen spices that lift it just enough without taking over. I’ll admit, I rarely make this myself because it’s a little fiddly for a small vegetable side — lots of trimming, peeling, and chopping. But it’s otherwise extremely easy, especially if you’ve got little hands helping you with all the fiddly bits (bless our bachay!). :) Given how much we love it, and how quickly it disappears every time, I think it’s time I start making this one more often.
