This is not something I grew up with as it's a Punjabi dish. I still remember when I first had it, at Rehan Chachu and Nausheen Chachi's house in California. I recall Nana-Jaan being there with us too because he was familiar with it but hadn't had it in years. Abbu had grown up eating and loving Imrasia Nani's kari, which he still talks about to this day! Anyways, I didn't learn how to make this...until now.. I must admit, it's a bit of a process...but ultimately worth it for a unique and tasty dish. Just don't say I didn't warn you!

Ingredients

0.5 cup oil?
22 g ginger (1"), grated or minced
2 large medium tomatoes, halves or quarters
