I was trying to think of how I could combine two of my favorite things, Chili Dogs and Cheeseburgers, and I ended up making a hot dog infused chili, to go on top of a a burger. The cool thing about this recipe is, you can use it on hot dogs, you can use it on french fries, and in this case, you can use it on a cheeseburger. Before you read through the recipe and get weirded out that I used chocolate, don’t, the chocolate powder is a game changer when talking about chili. The cocoa powder gives this chili a complex flavor profile that you can’t really pinpoint, you can just embrace the deliciousness! It gives it balance by evening out the heat from the cayenne, and acid from the tomato paste. It also gives it this luxurious consistency that I have yet to find in other non cacao powder based chilis. Because I just didn't want to add cooked hot dogs on top of this burger (that does sound good) I added diced hot dogs to the inside of the chili, bringing this concept full circle to a chili cheese dog burger!
