
Puffy Tacos
I’ve been known to make out of this world taco creations but this recipe isn’t that, in concept. However, this recipe is out of this world in simplicity and taste! I watched a show about tacos from around the world and was surprised to know that the puffy taco was created in Texas. It’s almost safe to say this was the first ever tex mex creation! The meat is cooked with peppers, onions and potatoes, which gives it such a great texture. This goes perfect with puffy and fried corn tortillas! For my toppings of choice, I kept it simple with diced tomatoes, iceberg lettuce and shredded cheddar cheese. This taco has inspired some of the most popular tex mex creations, and with these simple ingredients, there's no wonder why.
