This is a wonderful tart featuring an almond sablé biscuit base, vanilla white chocolate cream, almond sponge cake with sugar pearls soaked in a strawberry punch mix, fresh strawberries with strawberry jam, and a finishing touch of whipped vanilla cream. Essentially, it’s a take on a strawberry fraisier but in tart form. The flavours are classic yet beautifully balanced, with a delicate contrast of textures. The addition of pearl sugar adds a lovely crunch with each bite (highly recommended!), though it's best enjoyed on the same day for the perfect texture. On that note, one of the great things about this recipe is that all the components can be prepared 1–2 days in advance and assembled just before serving.
