Mast o khiar is basically Iran's version of Greece's tzatziki. There are some slight differences though in the way it's prepared– the cucumbers are chopped here instead of grated. The herbs can sometimes be the same–primarily mint and/or dill, but I like to add some basil to my mast o khiar as well. Both can be served as dips or alongside food. If you'd like to make this as a condiment, I'd skip the mint oil, raisins, and walnuts. I made my potato chips from scratch here, honestly just because I've always wanted to try making them. While they were amazing, I'd suggest saving that time and effort by using store-bought chips. I'd recommend a good kettle-cooked chip like cape cod. The cook time would be closer to 20-30 minutes if you skip making the chips yourself.

Ingredients

3 cups Greek yogurt or labneh (24 ounces)
2 large Russet potatoes, peeled
Neutral oil, for frying
