I wanted to recreate the flavours of an amba laden shawarma but make it mac and cheese. If you don’t know about amba, you’re missing out. It’s a pickled mango sauce which has curry notes, and is just the right blend of sweet, savoury, spicy and acidity. Perfect to balance the creaminess of a mac and cheese.
