I am a huge veggie freak and aim to have 30 veggies a week. But there can be times when I see too many veggies and can feel overwhelmed, or I want to use veggies in a new way. Dicing up veggies into small-sized pieces and mixing them into rice means I can sneak in more fibre, nutrients, and other good stuff into my food without even knowing it. Great for picky eaters!
