This mashup has been top of mind for weeks now. Merging one of my all time favorite dishes, Hong Kong-style French Toast, with the iconic Sticky Toffee Pudding. Before diving into the recipe, know this: it's simply inspired by sticky toffee pudding. It doesn't include baking a sponge cake but with a few work arounds the flavor comes pretty close! The recipe starts with a homemade brown sugar date spread. It only requires three ingredients: medjool dates, brown sugar & water. Dates are key to any sticky toffee pudding. My recipe makes enough for this Hong Kong French Toast & then some—so reserve the rest to enjoy in a second helping of this recipe, toast or simply eat as-is, no judgement. It's slathered on slices of brioche then dunked in a spice-filled batter of cinnamon, clove & nutmeg. Once fried, it's drenched in a homemade toffee sauce. To cut through that sweetness, I recommend finishing with a dollop of creme fraiche & a generous pinch of flaky salt.
