Think of this as a pesto pasta but not really. This nutrient dense pasta comes together in about 25 minutes and most of it is spent waiting for some things to boil! This recipe flows really well–all the cooking is done in the same boiling water! As the water comes up to a boil you can get all of your greens for the sauce together. Blanch for 45 seconds and transfer to an ice bath. Drop the pasta in to cook and in the meantime you just need to blend the blanched ingredients with a few others. Once the pasta is ready you combine and eat. If you are too lazy to blanch the veggies, I understand–you can skip that entire process. The sauce would have a bit more of a kick to it and be less green, but it would still be delicious. If you want a well balanced meal, all you need is a can of sardines on the side, or if that isn't your thing bake some salmon in the oven!
