Baked Salmon and Zucchini Salad
Most of the time I make cheat day, over the top creations that are heavily infused with cheese, and most of the time deep dried. Every now and again I like switching it up for something a bit lighter, healthier and in this case fast! One of my go to healthy meals is salmon and a side salad. In this recipe I took it to the oven with a heavily seasoned baked salmon and tried a new delicious salad to go with. These days its easy to find spiralized zucchini noodles readily available at the grocery store, but if you can’t find them, sliced zucchini will work just the same! The baked salmon is a foolproof way to eat light, and the zucchini salad is a great side to go with! I infused the cajun seasoning with not only the salmon but also the salad dressing, but if you’re following the recipe, you might have some left over! Use it for chicken, shrimp or even season your french fries and roasted potatoes with it!
