This fermentation takes about 2 months for the lemons to become tender, and even longer for the flavor to fully mature. Worth the wait! It provides a succulent flavor to your dish without the bitterness of the fresh lemons. The flavor can best be described as salty umami and slightly savory. Everything you need is Salt and Lemons, that’s it! No special canning equipment is needed or refrigeration is required.
