Rice Krispie squares hit deep for me. As an immigrant child growing up in the 80s and 90s, these were a source of so much pain and longing. All the other kids seemed to have them at school — and they were everywhere at birthday parties and bake sales. They smelt so darn good, but I couldn’t have them because of the gelatine in the marshmallows. Well, thank goodness for halal marshmallows, because I can finally satiate my childhood dream. And yes, they’re every bit as good as I always imagined! It’s funny — they’re so simple, but so incredibly satisfying. That said, making them can easily turn into a messy, difficult endeavour. Trust us on this: follow the notes carefully to avoid the pain. And please, please use mini marshmallows. Abbu was so desperate to have these for his birthday that he once bought long marshmallow strips and had Ayla chop them into teeny-tiny pieces. I’m still traumatised from that experience.
