This is a truly decadent chocolate chip cookie recipe, with both a classic and a brownie version. Personally, I love the brownie version most; it has the perfect balance of sweetness, rich chocolate flavour, and indulgence. Using three types of chocolate is what makes these cookies feel extra special. The addition of white chocolate, especially, adds a slight crunch as it caramelises in the oven, while also bringing a surprisingly creamy sweetness that pairs beautifully with the deeper cocoa notes in the brownie version, but also in the classic. The dough uses less sugar to balance the heavy chocolate. On that same note, the neutral oil helps improve the overall texture and spread. Fun cookie to make.
