The Blueberry Sourdough Pancake
*makes one pancake but that serves 2 people* After a great deal of recipe testing, I finally developed THE Blueberry Sourdough Pancake. Seriously though it’s slow fried in olive oil which makes it crispy, the perfect match between doughy and pancakey, the perrrrfect level of sweetness with a hint of salty from the flaky salt on top, and I mean anything smothered and covered in butter and maple syrup is a win in my book. I opted for Kefir instead of buttermilk (traditionally found in pancakes) because 1. I usually have Kefir in my fridge and 2. probiotics baby! Really really really happy with this one and I hope you will be too! *If you typically discard 200g of starter you can absolutely double this recipe. That's also a great edit for a bigger crowd, just remember you'll need two pans.
