Fideo Verde with Meatballs
Fideo is a very popular pasta or noodle to make "soap or soup in English, but there are many ways that it's cooked. This soup is so good, and you can add cooked ground beef instead of meatballs if you don't have much time; season it the same way as the meatballs. Also, chicken can be a great substitute for this soup. I like overcooking my meatballs when they go into a soup, and they are slightly crispy on the outside because this intensifies the flavor, but you can cook them how you like or even add them raw when the sauce/broth is hot.
