Soba noodle is one of my favourite type of noodles that is gluten-free and has a higher level of protein than regular wheat noodles as they're made with buckwheat flour. This recipe is a classic made vegan and with some delicious twists of fried mushroom and soy garlic crumble toppings. Feel free to make some extra stock and toppings ahead of time so you can enjoy it again in a few days by just cooking up some noodles.
