These crunchy taco cups are perfect for dinner, meal prep, or a fun Taco Tuesday appetizer! You can use ground meat for the filling or keep it plant-based by using lentils. I use black caviar lentils here, which have been my favorite lentil thus far. I also use vegan cheese sent by @neverbetterfoods. This is a quick and easy recipe, and you can customize the filling and toppings to what you prefer. Enjoy!

12 mini tortillas, 4 inches in diameter
0.5 cup freshly diced bell peppers
