Coconut rice is a staple in Colombian cuisine, specifically from the Caribbean region. It is usually served with fried fish, and salad, oftentimes with green plantains, fried, of course. The technique is very simple, you need to make a caramel with the coconut milk, and some raw sugar, this caramel is called 'titoté.'
