These Almond and Raspberry cute cookies were just an experiment. I often struggle with my weekly intake of legumes.Apparently everyone should eat legumes at least 4-5 times a week, vegetarian and vegan around 10-14 times a week. Which is madness is it not? I love beans... but come on! It sounds really difficult to achieved. So i thought.. can I instead using the legumes together with something else? And, Tannnaaan! I created these cookies. They taste quite nice and different at the same time. Chickpea flour is rich in Studies say that chickpea flour can help in managing your blood sugar levels. Firstly, it has a low Glycemic index (GI). Secondly, it is rich in protein and fibre. Several studies have found that a protein-rich diet can help in maintaining a healthy blood sugar level.
