This recipe for chicken breast stuffed with cornbread sausage stuffing is a special creation inspired by countless hours spent in the kitchen with my mom. Growing up, I’d watch her cook, never writing anything down, but you could feel the love she put into every dish. Over the years, I experimented with different ingredients that reminded me of Mom, and this recipe came to life. I've been perfecting it since 1991, and finally wrote it down in 2024 to share with you. It’s a real crowd pleaser and the presentation is just beautiful. 1 lb bulk hot sausage, crumbled and cooked (I like Jimmy Dean’s Hot Sausage for this recipe)
3 tablespoons olive oil
