Growing up Gluten Free for me meant that I was never able to enjoy the world of pizza. One of the most frustrating things was going out with friends and having to watch them indulge in a large pizza all by themselves, all whilst I sat them there watching on with envy. As Gluten Free Pizza started gaining popularity, I still wasn’t impressed. My friends were able to enjoy a floppy, bendy pizza with an amazing crust, whilst I had to suffer the pain of eating a hard pizza in which the texture resembled cardboard. It was at this point where I gave up eating Gluten Free Pizza out and began develop my own homemade, Gluten Free pizza. I am so proud to say that this micro-journey was worth it.
