As I leaning towards more plant-based sources of protein, I took a twist to the classic Ssamjang recipe with tofu and nuts. Ssamjang is a Korean sauce typically made with gochujang and doenjang (soybean paste) base and usually enjoyed in wraps or as dipping sauce to veggies sticks. It's typically served when you go to Korean bbq as well. With this Ssamjang recipe, you don't need much else other than fresh lettuce and whatever other leafy veggies of your choice to wrap the rice and Ssamjang in. It is that good! For the nuts & seeds mix, I used Brazilian nuts & pumpkin seeds but you're welcome to opt in for what you enjoy!
