Dashi means “stock” and it’s one of the main ingredients that gives Japanese food its unique flavour. Japanese is one of my favourite cuisines, and it’s been fun making more Japanese meals at home. Dashi is used in recipes like: Oyako Don, miso soup, tempura udon, Gyudon, agedashi tofu.

Ingredients

4 cups of water
1 piece dried kelp (KOMBU)
1 cup katsuobushi (dried skipjack tuna flakes)
